Baked Vegetarian Potato And Bulgur
This is a vegetarian , satisfying and easy recipe for Kubbet (Kibbet) Batata (Baked Potatoes With Cracked Wheat). It does not take much time to prepare if you happen to have all the ingredients at home. It makes a nice presentation and easy to handle finger food if you are having a gathering or a party. - 2 Large Potatoes
- 1 cup Cracked Wheat (Bulgur)
- 1 cup warm water
- 1 cup Olive Oil
- to taste Salt
- to taste Black Pepper
- to taste Allspice
- 1 Onion
- 1 cup Walnuts
- to taste Salt
- to taste Black Pepper
- to taste Allspice
- 1 tablespoon Sumac(optional)
- Pomegranate Molasses(optional)
Instructions
Step 1
<a href="/8BSVY4LZ">Wash,</a> <a href="/RSDQ7YW8">peel,</a> dice and <a href="/W7VKDJHH">boil </a>the potatoes until <a href="/3L3754DG">tender.</a> <a href="/LYM2NCDW">Mash </a>and <a href="/7S3QCKWK">mix </a>with <a href="/DPSVTKVY">salt,</a> black pepper, and allspice.
Step 2
Add the already <a href="/NM2HN7TN">soaked </a><a href="/Z27T5R5G">cracked </a>wheat and <a href="/7S3QCKWK">mix </a>with the <a href="/LYM2NCDW">mashed </a>potatoes. To <a href="/7S3QCKWK">mix </a>together well, use your hands, this way you will get a feel of how wet or firm the dough is. Add the olive oil gradually.
Step 3
Saute' the<a href="/6L7QNTJV"> chopped</a> onions until translucent. Add the<a href="/6L7QNTJV"> chopped</a> walnuts and<a href="/7S3QCKWK"> mix</a>. Add the spices. At this point you<a href="/TPWNYF5L"> can</a> decide if you want to add the Sumac OR the<a href="/J8CYHQ26"> Pomegranate</a> Molasses.

To make the Potato Kubbeh in a pan ( Kubbeh bil Senyyeah):

Grease <a href="/RNT367Z2">baking </a>pan with olive oil. Flatten half of the potatoes and wheat dough in the <a href="/RNT367Z2">baking </a>pan. Spread the onion and walnut mixture. Add the <a href="/R34ZSY3M">top </a>layer by flattening the dough into hand size pieces, add on <a href="/R34ZSY3M">top.</a> At the end smooth the <a href="/R34ZSY3M">top </a>layer by wetting your hand in little water. <a href="/XZBDDD5G">cut </a>into squares or diamond shape before <a href="/RNT367Z2">baking.</a> You may drizzle with olive oil on <a href="/R34ZSY3M">top.</a>

It might be difficult to <a href="/NZ2LK8CC">fry </a>in a deep fryer. When I tried it the <a href="/LTNN8R88">rolls </a>fell apart, so I recommend that you make this type of Kubbeh in a pan only and <a href="/RNT367Z2">bake </a>in the oven.
