- fresh strawberries(optional)
- 2 quarts fresh strawberries, sliced
- 3 tablespoons powdered sugar
- 2 cups whipping cream
- 1/2 cup strawberry preserves
- 3 large eggs
- 1/2 cup butter or margarine, softened
- 2/3 cup buttermilk
- 1 packet butter recipe golden cake mix (18.5 oz)
Instructions
Step 1
Beat the butter recipe golden cake mix, large eggs, softened butter or margarine, and buttermilk at low speed with an electric mixer until moistened. Continue to beat at medium speed for 4 minutes.
Step 2
Pour batter into two greased and floured 9-inch round cake pans. Bake at 350 degrees F for 18 to 20 minutes, or until a wooden pick inserted in the center comes out clean.
Step 3
Cool on wire racks for 10 minutes; remove from pans. Brush the top of each cake layer with 2 tablespoons of strawberry preserves. Continue to cool on wire racks.
Step 4
Beat the remaining strawberry preserves with whipping cream and powdered sugar at high speed with an electric mixer until stiff peaks form.
Step 5
Place one cake layer on a serving plate. Arrange half of the sliced strawberries over the layer; top with half of the whipped cream mixture. Repeat this procedure with the remaining cake layer, sliced strawberries, and whipped cream mixture. Garnish with fresh strawberries, if desired.
