  • 1 8 oz chicken breast, flattened thin
  • 1 1 oz Laughing Cow Cheese (or any spreadable cheese)
  • 5 pickled jalapenos, diced small
  • 1/4 cup pretzels, chopped
  • 1 teaspoon flour
  • 1 egg white, mixed
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon black pepper
  • dash cayenne pepper
  • dash hot sauce

Step 1

Preheat oven to 400°F.

Line a baking sheet with aluminum foil, then top it with a cooling rack. Spray the rack with non-stick cooking spray and set aside.

In a bowl, combine the chopped pretzels, garlic powder, black pepper, and cayenne pepper. Set aside.

In a separate bowl, combine the egg white and hot sauce.

Take the flattened chicken breast, spread the cheese over it, and top with diced jalapenos. Seal the chicken shut with 3 or 4 toothpicks.

Carefully dip the chicken into the egg mixture, then into the pretzel mixture. You may need to press the pretzels onto the chicken by hand to ensure it's fully covered.

30 minutes or until done

Place the breaded chicken on the prepared baking rack and bake in the preheated oven for 30 minutes or until the chicken is fully cooked.

Remove the toothpicks from the chicken before serving.
