Marinated Potato Salad - Heart-Healthy

Ingredients

3/4 pound boiled potatoes, peeled and coarsely chopped
3/4 cup vinaigrette (recipe follows)
1 can artichoke hearts, drained and coarsely chopped
1 small bell pepper (green or colored), stemmed, seeded and coarsely chopped
1/2 small red onion, coarsely chopped
1/2 can pitted black olives, drained
VINAIGRETTE (or use bottled vinaigrette of your choice)
1 tablespoon sugar
2 teaspoons snipped fresh thyme, oregano, or basil; or ½ t dried thyme,<
1/4 teaspoon dry mustard, or 1 T Dijon-style mustard (optional)
1/2 teaspoon ground black pepper
salt to taste (½ t recommended)

Preparation

Mix vinaigrette ingredients in bottle or jar with tightly fitting lid and shake well.

Toss salad ingredients with vinaigrette in bowl. Cover and chill for 2 hours or overnight, mixing occasionally.
