Oatmeal Yogurt Pancakes

Ingredients

6 ounces peach flavored lowfat yogurt or other flavor
1/2 cup old-fashioned or quick-cooking oats
1 cup skim milk or more
1 tablespoon sugar
1 teaspoon baking powder
2 teaspoons vegetable oil
1/2 teaspoon baking soda
Additional yogurt if desired

Preparation

Heat griddle or skillet over medium heat or to 375F. Griddle is ready when a few drops of water sprinkled on the surface jump around. Grease heated griddle with margarine if necessary. Beat egg in large bowl, using hand beater; stir in remaining ingredients except additional yogurt. (For thinner pancakes, stir in an additional 2 to 4 tablespoons skim milk.)

For each pancake, pour about 3 tablespoons batter from tip of large spoon or from pitcher onto hot griddle. Cook until puffed and dry around edges.

Turn and cook other sides until golden brown. Serve with additional yogurt.
