Cajun Liver

Ingredients

2 tablespoons whole wheat flour
2 tablespoons wheat germ
teaspoon paprika
teaspoon ground thyme
teaspoon white pepper
pound calves' or veal liver, sliced
inch thick

In shallow bowl or dish, combine flour, wheat germ, paprika, thyme, white pepper and cayenne. Mix well. Pat liver slices with paper towel. Dredge liver slices in flour mixture, coating thoroughly..

In nonstick skillet over medium heat, cook liver slices for about 4 minutes or until undersides are browned. Turn, cook for about 3 minutes longer or until second side is browned and liver still slightly pink inside. Serve immediately.
