South Seas Chicken

Ingredients
8 ounces picked chicken meat (see step 1 below)
10 ounces fresh pineapple, diced 1/2" pieces
1 ounce canola or olive oil
1/2 cup onion, diced 1/4"
1 tablespoon apple cider vinegar
1 medium red pepper, diced 1/2 " pieces
1/2 teaspoon pumpkin pie spice
1/8 teaspoon dried ginger

Bake chicken at 325 degrees until done (middle of thigh reaches 155 degrees internal temperature) Pick the chicke from the bone. Use 8 ounces per recipe.

Combine all ingredients in frying pan. Saute until pepper and onion are done. Serves 2.
