Chilli Con Carne

Ingredients

500 grams very lean beef steak mince
1/2 large white onion, sliced
350 grams tinned chopped tomato’s
1/4 fresh red chilli, de-seeded and sliced
2 teaspoons mild chilli powder

Preparation

In a drop of olive oil, fry off the beef for a couple of minutes and then add the sliced white onion. I like to use the large white onions as they retain their crunch while cooking.

Add the kidney beans and tomato’s and stir gently for a moment or two.

Stir in the chilli powder followed by the fresh chilli.

Simmer for 15-20 minutes, ensuring that beef is cooked through.
