- 2 pie shells
- 4 medium apples, peeled, cored, quartered and sliced
- small piece of fresh ginger, a little less than an inch or so, minced
- 1 lemon, juiced
- 1/2 cup sugar
- 1 tablespoon ground cinnamon
- 1/2-1 teaspoon ground nutmeg
- 1 tablespoon flour
- 1 egg wash (1 egg white and 1 teaspoon water)(optional)
- sugar for sprinkles (a few pinches)

Preheat oven to 375°F.

If using frozen pie shells, thaw them on the counter for about 10 minutes.

Meanwhile, mix the prepared apple slices, ginger, lemon juice, sugar, cinnamon, nutmeg, and flour together. Transfer the mixture into the first pie shell.

Take the second pie shell and drape it over the pie. Cut a cross in the middle for steam to escape. Brush egg wash on top and sprinkle liberally with sugar.

Bake for 30-40 minutes, or until the crust is golden and the filling is bubbling.
