Grilled Potato Wedges With Malt Vinegar Aioli Sauce

Ingredients

Sauce:
1 cup mayonnaise
1/4 cup malt vinegar (scant ΒΌ cup)
2 cloves garlic, mashed into paste
1 tablespoon Dijon mustard
1 tablespoon fresh tarragon, finely chopped
Salt& Pepper to taste
Wedges:
6 Russet potatoes, scrubbed
1/4 cup olive oil

Preparation

Whisk together all sauce ingredients.

Cover & refrigerate 30 mins.

Put potatoes in a pot of cold water

Add 2 Tablespoons salt

Cook on medium heat until tender approx. 10 mins.

Drain, cool & cut lengthwise into 8 wedges

Heat grill to high (500 degrees)

Brush wedges with oil, season with salt & pepper to taste

Grill until golden & cooked through approx. 2-3 mins per side

Serve with sauce & enjoy!
