Lime Vinaigrette

Ingredients

3 tablespoons Fresh lime juice
2 teaspoons Grated lime zest
1 tablespoon Minced garlic
2 tablespoons Chopped cilantro and/or mint
1 teaspoon Chopped, seeded Serrano chile or to taste
teaspoon Toasted ground cumin
3 tablespoons Olive oil
Salt to taste
Freshly-ground black pepper to taste

Preparation

Whisk all of the ingredients together. Can be stored covered in the refrigerator for up to 3 days.

This recipe yields about 1 cup of vinaigrette.
