  • 2 tablespoons soy sauce
  • 1 tablespoon toasted sesame seeds(optional)
  • 2 tablespoons lemon juice
  • 1 whole lemon
  • nonstick cooking spray
  • 2 tablespoons chopped green onion
  • 1/4 cup chopped cilantro
  • 1 cup rice
  • salt(optional)
  • 2 cups water
  • 4 boneless chicken breasts
  • 2 cloves garlic, minced
  • 2 teaspoons Chinese five-spice powder

Step 1

Remove skin from chicken breasts and rub with minced garlic and Chinese five-spice powder. Season with salt to taste. Cover and let the chicken stand for 30 minutes. Meanwhile, bring 2 cups of water to a boil in a saucepan and add 1 cup of rice. Reduce heat to simmer, cover, and cook until the rice is tender and the water is absorbed, about 20 minutes. Stir 2 tablespoons of chopped cilantro and green onion into the hot rice. Keep warm.

15 to 20 minutes

Grill the chicken on an outdoor grill or an indoor grill pan, sprayed with nonstick cooking spray, until the center of the chicken is no longer pink. This will take 15 to 20 minutes. Squeeze the juice from one lemon over the cooked chicken and sprinkle with the remaining chopped cilantro.

When ready to serve, spoon the rice onto a platter and sprinkle with toasted sesame seeds. In a small bowl, combine the soy sauce and 2 tablespoons of lemon juice. Serve the chicken with the rice and soy-lemon sauce.
