3/4 cup or 70 grams coconut flour (or any other type of flour)
1/2 cup or 120 grams of powdered stevia (or equal amount of liquid stevia) (or any other healthy sweetener)
1/4 cup or 25 grams unsweetened dark cocoa powder (or regular or baking unsweetened cocoa powder)
1 teaspoon baking powder
1/2 teaspoon baking soda
1 teaspoon instant coffee granules or 1 shot espresso (optional)
1/2 teaspoon Himalayan,table or sea salt
1/4 teaspoon xanthan gum for thickness
6 large size whole eggs (or flax or chia eggs for the vegan option)
1/2 teaspoon vanilla extract
2 teaspoon apple cider vinegar or wine vinegar
4 ounces or 110 grams unsalted low-fat grass-fed cow butter (or coconut butter or cream for the vegan option)
1 ounce or 30 grams sugar-free chocolate chips or baking chocolate (or regular sugar-free chocolate)
The cream cheese frosting
1 cup low-fat or fat-free cream cheese (or regular cream cheese) (softened) (or coconut cream for the vegan option)
2-3 tablespoons liquid stevia (or other healthy sweetener of your choice)
sliced cherries or berries for topping


The first step is to preheat your oven to 350°F or 175°C degrees.
Get a loaf or bread pan,place a baking or parchment paper in it and spray with some non-stick cooking spray.Or grease with some more butter or oil.
Put all of the dry ingredients in a large mixing bowl and mix them by hand or with mixer.
Take the butter or coconut butter and the sugar-free chocolate chips and place them in a microwave-safe bowl.Put the bowl in the microwave for about 30 seconds.Remove from the microwave,stir and put it back in until it is completely melted and well combined.
Beat the eggs and them to the bowl with dry ingredients.After that,add the vanilla extract and apple cider or wine vinegar.
Stir everything together,then add the melted butter with chocolate chips.
Mix well everything until you have nice and thick chocolate cake batter.
Pour your batter into the greased loaf or bread pan.
Put the pan in the preheated oven and bake the cake until a toothpick comes out clean when inserted in the center.About 30-40 minutes will be good.Every type of flour is different and the baking time will be different for each type.
After the cake is done,remove from the oven and cover it with a towel for about 15-20 minutes to keep it moisture.
After that,use a knife or small spatula to remove the baked cake from the pan.
To make the cream cheese frosting,beat your low-fat or fat-free cream cheese with 2-3 tablespoons of liquid stevia.
Sprinkle some more powdered stevia on the top of the cake.
Spread the frosting over the ready cake.
Slice some cherries or berries like strawberries or raspberries and top the cake with them.
Serve immediately or wait until is cooled completely and enjoy chilled.
