Veggie and Tofu Kabobs

Ingredients

Tofu - cubed
1 medium green pepper
1 medium zucchini
1/2 cup of olive oil
1 tablespoon of garlic powder
1 teaspoon of dried parsley
Salt and pepper - for seasoning
8 skewers - metal or soaked wood

Preparation

In a bowl, combine the olive oil, garlic powder, parsley, red wine, Worcestershire sauce, salt and pepper.

Pour half the marinade in a large plastic bag and add tofu and veggies.

Seal tightly and refrigerate for at least 2 hours.

On eight skewers, alternately thread tofu and veggies.

Grill for 10 minutes, bast with leftover marinade, turn and grill for an additional 10 minutes - or until everything is tender.
