Tourtiere

Ingredients

1/2 pound ground turkey
2 medium onions, peeled and diced
Dash or of powdered cloves
Salt and freshly ground pepper to taste

Preparation

Chop bacon into 1/2 inch pieces and sauté in a hot, large pan until the fat has liquified. You may add a little olive oil if you like.

Add diced onions and cook until onions just start to brown.

Add the ground meat. Cook until the meat has just turned with no pink left. Add the seasoning and garlic.

Stir to mix. Put in a large bowl and allow to cool to room temp or a little warmer.

Make your pie crust and line the bottom of a deep dish 9 or 10 inch pie plate with dough.

Add mashed potatoes to meat mixture and blend thoroughly. Taste and adjust seasonings.

Fill pie plat with mixture and top with second sheet of pie crust.

Bake at 375 F for about 40 minutes or until crust is brown and filling is sizzling.

This is a recipe from my French Grandmother. I've made it with beef and pork sausage and also with vegetarian TVP.
This dish is a tradition at the Christmas Eve 'Reveillon' but is a wonderful main course on any chilly winter night.
I team mine with a red onion coulis and a smear of whole grain mustard, and a bold dry red wine.

8.0 normal or 6 ravenous people
