Banana-Coconut Oatmeal Bread

Ingredients

1 1/4 cups flour
1/4 cup sugar
1/2 teaspoon salt
1/4 teaspoon baking powder
2 teaspoons cinnamon
1 tablespoon canola oil
1 1/2 teaspoons vanilla

Preparation

Use a fork to whisk dry ingredients in a medium bowl

Mash bananas with your fork - I do it on a piece of waxed paper

Whisk your egg and whites in a measuring cup or small bowl

Add the vanilla and canola oil to the egg

Add the bananas and egg mixture to the dry ingredients

Mix well

Pour into greased loaf pan (or sprayed with baking spray)

Bake at 350 for 45-55" until tests done

Let cool on rack in pan for 5" before inverting from pan to finish cooling

I was trying to come up with something different to do with some rapidly aging bananas. Came across a beautiful looking Banana Oatmeal Bread on a Weight Watchers site. I added the vanilla, cinnamon, and coconut, and because I only had dark brown sugar, I split the different and used half white and half dark. You can definitely feel the oatmeal aspect of this recipe, so the closest bread I can equate it to would be a Date Nut Bread. I like it as is, but I'm thinking it would be really good grilled up for breakfast in a tiny bit of butter. Yumm!
