  • 1.0 kg tomatoes
  • 1.0 kg red capsicum
  • 4.0 units medium onions
  • 4.0 teaspoons crushed garlic
  • 1.0 teaspoons chilli paste
  • 2.0 tablespoons vegetable oil
  • 1.0 tablespoons dry mustard
  • 1.0 tablespoons sweet paprika
  • 2.0 cups white vinegar
  • 1 cup caster sugar
  • 2.0 teaspoons salt
  • 5.0 units cloves
  • 1 teaspoon cayenne pepper

Step 1

Ensure storage jars are well sterilized.

Cut tomatoes into quarters. Dice onions and capsicum.

Heat oil in a pot and sauté onions, capsicum, garlic, chili, and tomatoes gently until soft.

Add remaining ingredients to the pot, bring to a boil, stirring. Reduce heat and simmer until the mixture is thick, stirring occasionally.

Purée in a food processor or vitamiser until smooth. Return the mixture to a clean pot, bring back to a boil, and cook, stirring frequently.

Adjust seasoning by adding more sugar or vinegar to taste.

Ladle into hot jars or bottles and seal.
