- 1.0 kg tomatoes
- 1.0 kg red capsicum
- 4.0 units medium onions
- 4.0 teaspoons crushed garlic
- 1.0 teaspoons chilli paste
- 2.0 tablespoons vegetable oil
- 1.0 tablespoons dry mustard
- 1.0 tablespoons sweet paprika
- 2.0 cups white vinegar
- 1 cup caster sugar
- 2.0 teaspoons salt
- 5.0 units cloves
- 1 teaspoon cayenne pepper

Step 1
Ensure storage jars are well sterilized.

Cut tomatoes into quarters. Dice onions and capsicum.

Heat oil in a pot and sauté onions, capsicum, garlic, chili, and tomatoes gently until soft.

Add remaining ingredients to the pot, bring to a boil, stirring. Reduce heat and simmer until the mixture is thick, stirring occasionally.

Purée in a food processor or vitamiser until smooth. Return the mixture to a clean pot, bring back to a boil, and cook, stirring frequently.

Adjust seasoning by adding more sugar or vinegar to taste.
