Italian Meatball Pizza Cups

Ingredients

8 tablespoons pasta sauce, divided
4 Romanita tomatos, halved
2 mini-sweet peppers, quartered
8 fresh basil leaves

Preparation

Preheat oven to 350ºF.

Spray 4 cups of a Texas-sized muffin cup pan with non-stick spray.

Flatten 4 biscuits and press one into each of the 4 prepared cups.

Place 1 Tablespoon pasta sauce in each biscuit.

Place 1 meatball, 1 piece of tomato, 1 piece of pepper, 8 or 10 mozzarella pearls (or a slice of fresh mozzarella) and a basil leaf in the cup.

Sprinkle lightly with salt (optional).

Top with another Tablespoon of sauce.

Bake for 15 minutes.

Repeat with the other half of the ingredients to make 4 more cups.

Allow 2 cups per serving.

About

This recipe came into being by having my 4 kids arrive home from school at 3:30 in the afternoon absolutely ravenous. The night before we'd had spaghetti and meatballs for dinner and had leftover sauce. With the biscuits, veggies and cheese I made ultra-deep dish pizza cups. We have this once a week now...by popular demand!
