Eva's Onion Bhajis

Ingredients

1 large large Vidalia onion, medium-coarsely chopped
2 large eggs, lightly beaten
2 cups water
1 teaspoon cumin
1 teaspoon meat masala
1/2 liter peanut oil

Preparation

Sift spices into the chickpea flour.

Mix chickpea flour into egg mixture, adding water to make a thick batter. Add onions and mix well.

Heat peanut oil until it is 350°F. Fry by teaspoon full until golden brown.

Cool and freeze in a zip lock bag.

To reheat, pre heat oven to 350°F, place in a single row on a baking sheet and bake for 15-25 minutes, until defrosted and warm all the way through.

Serve with your favourite sweet and spicy sauce (we served it with the Papaya BBQ Sauce)

I've made these a few times now, I just do them from memory. Chickpea flour makes these delectable morsels gluten free! The trick is very hot oil and fry them until golden brown so they cook all the way through. Perfect for freezing.
