Tequila Tenderloin

Ingredients

cup prepared mustard
2 cloves garlic, cut into halves
cup chopped carrots
cup chopped celery
2 teaspoons ground red chiles
1 teaspoon cumin
1 teaspoon salt
1 teaspoon dried oregano
1 teaspoon dried thyme leaves
teaspoon pepper
4 mediums tomatoes, chopped
1 small onion, chopped
cup snipped parsley

Preparation

Spread mustard over pork. Heat oil and garlic in skillet until hot. Cook pork in oil over medium heat until brown. Remove garlic. Stir in remaining ingredients except parsley. Heat to boiling; reduce heat. Cover and simmer until pork is done, about 30 minutes. Remove bay leaf. Sprinkle with parsley.
