Grilled Vegetable Tortilla Roll With Pimento Cheese


1 tub Palmetto Cheese 12 oz
2 inches zucchini, sliced lengthwise ⅛ slices
2 inches yellow squash, sliced lengthwise ⅛ slices
1 bunch green onions


Slice zucchini and yellow squash lengthwise with a knife or mandolin. Thin slices will make the tortillas easier to roll up.
Toss zucchini, squash and green onions with a little olive oil and place on the grill. Cook for a few minutes on each side. Remove from grill and set aside.
Spread 1 Tablespoon of Palmetto Cheese evenly onto a flour tortilla. Place 2 to 3 slices of zucchini, yellow squash, and red pepper on the tortilla. Place one green onion in the center. Roll up the tortilla by starting with the end closest to you and rolling tightly.
Slice into 3 to 4 pieces and serve. Can make these the night before and slice when ready to serve.


Can also use whole wheat, sundried tomato or spinach tortillas to add some additional color.
