  • 1-2 tablespoons butter
  • 3 eggs
  • 1/3 cup milk
  • 1/3 cup heavy cream
  • 1/2 cup flour, sifted
  • 1 ounce sharp white cheddar cheese, finely grated
  • salt and pepper(optional)
  • 2 zucchini, thinly sliced
  • 2 tablespoons olive oil
  • 1 small red onion, finely sliced
  • 2 cloves garlic, crushed
  • 2 tablespoons fresh parsley, chopped
  • 2 tablespoons fresh chives, chopped
  • 2 ounces plain goat cheese, crumbled
  • salt and pepper(optional)

Preheat your oven to 375°F (190°C).

Prepare the vegetables: thinly slice the zucchini, finely slice the red onion, crush the garlic, and chop the fresh parsley and chives as specified in the ingredients.

Heat the olive oil in a skillet over medium heat. Add the thinly sliced zucchini and finely sliced red onion. Sauté until softened.

Add the crushed garlic to the skillet and sauté for one additional minute until fragrant. Season with a pinch of salt and pepper. Remove the skillet from heat and set aside to cool slightly.

In a large mixing bowl, whisk together the eggs, milk, heavy cream, and sifted flour until the mixture is smooth and well combined.

Season the custard base generously with salt and pepper to taste.

Stir the finely grated sharp white cheddar cheese into the custard mixture.

Gently fold in the cooled sautéed zucchini, red onion, and garlic mixture along with the chopped fresh parsley and chives into the custard.

Lightly grease a baking dish with butter. Pour the custard mixture evenly into the prepared baking dish.

Crumble the plain goat cheese evenly over the top of the custard mixture in the baking dish.

Bake in the preheated oven until the custard is set, golden brown on top, and a knife inserted into the center comes out clean.

Remove the baking dish from the oven and let the Zucchini Goat Cheese Custard cool for a few minutes before slicing and serving.
