Fiesta Rice

Ingredients

cup Cooked brown rice
1 cup Grated reduced-fat cheddar cheese
1 2 ounces jar pimentos, drained and chopped
cup Skim, or 1%% milk
1 lrg Tomato, peeled and diced
1 dsh Paprika

Preparation

Preheat oven to 350 degrees.

Combine 1/2 cup of cheddar cheese and all other ingredients except paprika.

Stir until well mixed.

Spray casserole with vegetable spray.

Pour in mixture; top with remaining cheddar cheese and sprinkle well with paprika.

Bake 25 to 30 minutes.

Include:Some menus have 1 Skim Milk serving instead of 1 Meat or 1 Starch serving.

Lunch: 1 serving Fiesta Rice 1/2 cup green beans 3 medium prunes Tossed salad 1 Tbsp creamy ranch dressing
