Vanilla Essence

Ingredients

2 cups brandy (or vodka)
4 vanilla beans split lengthwise

Preparation

Place brandy in jar. Scrape in seeds from vanilla beans; add beans. Seal

Tightly.

Let stand in cool place at least 2 months, shaking jar occasionally.

Store in cool dark place.

Makes about 2 cups.

Alternatively you can simply slit the vanilla pods with a sharp knife exposing the seeds. Leave to steep in vodka in sterile jars or bottles.
