Fudge Recipe

Ingredients

1 ounce can evaporated milk ( 12 )
3 cups sugar
cup baking cocoa powder
1 tablespoon oleo
1 teaspoon vanilla
1/4 teaspoon salt

Preparation

In medium sauce pan put in milk, sugar, cocoa and salt. Bring to a boil at medium heat stirring constantly so as not to stick or burn. Cook to soft ball stage. 238 degrees or when you can drizzle it in a cup of cool water and make a soft ball out of it.

Remove from heat and add oleo and vanilla. have a serving platter ready that is buttered. stir the fudge until it starts to stiffen. This will take about 10-15 minutes. This most generally will be when it looses its gloss to a dull shine.

Pour onto a platter and place in frig

Pay attention about the changes in the stages so you can adjust the next time. Don't be discouraged by failures. It takes a long time to be able to make it consistent. If too hard cook it a little less next time. if to soft it will need to be cooked more next time. I still get failures sometimes, Its amazing hour the humidity will affect it. :)
