Pleasant View Farm Foie Gras, Toasted Brioche, Candied Rhubarb

Normally I’m not a huge fan of foie gras, but Copperleaf Restaurant and Bar's version in mousse form, with sweet and tart candied rhubarb, had me returning for seconds.
