After School Snacks: Roasted Buffalo Cauliflower

After school snacks that are tasty as well as healthy are not that easy to find. That's why I love this recipe for spicy cauliflower that is flavored like your favorite buffalo wings. My kids can hardly wait for them to cool before eating every crunchy piece. 

Thanks to Foodista contributor; Holly Sander, our family has discovered a new way to enjoy the abundant cauliflower that grows so well in Downeast Maine. Bite sized pieces of cauliflower roasted until they are crispy and richly flavored. The seasoning is simple and includes our favorite Frank's RedHot sauce. Then, the blue cheese dip is cool and creamy-just perfect for cooling off the heat. 

Roasted Buffalo Cauliflower with Blue Cheese Dip

For The Cauliflower:
1 large head of cauliflower
2 tablespoons olive oil
1 teaspoon garlic powder
1 teaspoon salt
½ teaspoon pepper
1 tablespoon finely chopped parsley (for garnish)
For The Buffalo Sauce:
2 tablespoons unsalted butter
¼ cup Frank’s RedHot sauce
1 tablespoon freshly squeezed lemon juice
For The Blue Cheese Sauce:
4 ounces blue cheese (2 ounces for garnish)
½ cup 2% fat plain Greek yogurt
1 tablespoon almond milk (or whatever milk you prefer)
1 teaspoon fresh squeezed lemon juice
1 tablespoon finely chopped parsley
salt and pepper to taste
