Ajvar
About
Ajvar is made from roasted red peppers and eggplants that are combined to a thick paste or relish. Caramelized onions and garlic are often added, as is sugar and vinegar to aid in preservation. Known throughout the Balkans, ajvar is a traditional relish in Croatia, and is made in late fall when the pepper harvest is in full swing.
