Garlic Lentils and Spicy Sausage

Ingredients

1/2 pound Dry lentils- or so
3 bay leaves
4 cloves of garlic
1/4 cup of olive oil
sausage (links or patties) Spicy Italian is the best
Oil/butter (to brown the sausage)

Preparation

Rinse lentils and place in a sauce pan.

Cover them with water, add half onion and bay leaves.

Cook until tender (but not mushy, the lentils should have a bit to them). Drain, discard bay and onion.

Fine chop garlic and paste with salt.

In separate bowl add olive oil and add garlic paste. Set aside (allow the garlic to infuse in the oil).

Add hot lentils to the garlic/oil mix and set aside.

While the lentils are boiling start cooking the sausage. Start the links in a pan and cover them half way with water. Allow them to cook through, once the water has boiled out add oil or butter and crisp the casings.

Serve with the warm lentils.

Sigh, that would be fun, but no. I am a better writer than chef (sadly this is one of my few dishes I make). But I am always on the look out for gluten free (and tasty) dishes. This is one of my favorites. I love lentils.

actually i cannot eat sausages because i am in the vegetarian stage
( well that is what my dad says )
