Sakekasu are the lees or leftover bits from Sake (Japanese rice wine) production. It is used in Japanese cooking for fermenting fish and vegetables, making soups and marinades. This recipe uses Sake kasu to make a delicious, umami marinade that you can use for chicken a nd other meat and fish recipes.
