I must admit… I LOVE this salad and it’s pretty much been on my weekly lunch rotation ever since I first made it. Not only is it super yummy, it’s also a really healthy and colorful way to indulge in your peanut butter cravings.

This macaroni with lots of cheese went about things differently, amalgamating pasta, butter, milk and cheese into one delicious unit, rather than dousing cooked noodles with cheese sauce.

I had a big smile on my face while I was eating this soup, mainly because there was bread involved. But also because I knew there would be leftovers. I am never usually this thrilled about leftovers, but I am so glad I’ll get to have this soup for lunch tomorrow.

Tarascan Soup is something I've been making for years. For me, Tarascan has come to imply "Mexican tomato bisque." It's such a great recipe because you can prepare it quickly and it's ready to eat in about 30 minutes.

These are the cat’s meow. The bee’s knees. The freaking best. Creamy and rich truffles filled with Bailey's Irish Cream and coffee.

One of my favorite things to make is a simple roast chicken, especially during the winter months. The skin of the chicken crisps up beautifully and the flavors of the poultry seep into the accompanying vegetables in the pan.

I really love these cookies. They are so easy and quick to whip up, and they don’t require any special ingredients. They’re healthy, really they are, even though the pictures may not look it.

Healthy Pizza is not an oxymoron anymore with this Quinoa Crust Pizza! Hurray! Imagine all the pizza you can eat! Seriously, this pizza was so good and you really couldn’t make out that it did not have a bread crust.

Do you need a fast & super easy meal? This spicy Mexican dish just might fit the bill. It’s pretty tough to take a pretty picture of a casserole, but I promise . . . it’s pretty tasty!

Homemade tomato soup with fresh spices, splashes of balsamic vinegar and wines, and olive oil is my favorite. I love it straight with basil, but sometimes I like to get fancy. Enter beer cheese.

I will say that this pasta dish is absolutely magnificent and the fact that it can be cooked, start to finish, in well under thirty minutes makes it even more so.
