While at the beach we had some amazing seafood freshly caught from the gulf, and I was reminded how fortunate we are to live so close to the sea! So in effort to lighten up our summer fare while still packing on the protein we have been whipping up this pan roasted red snapper along with an effortless "couscous" made entirely of vegetables.

I can't believe I haven't posted this recipe yet. My sisters and I ate this ALL the time growing up. Still do actually. No one else's pasta salad has ever come close to this one because it is the best!

I love plums, so I put a couple in a clear box and set them near a window to ripen up some. When they finally got a little soft, I decided to try another Sugar-Free jam like I had made out of my Bing Cherries a few weeks ago.

Technically, this is a sandwich, but one look and you know that it isn’t just a sandwich. This is serious business. There’s no mustard, mayo or deli meat, and it might require a fork and knife. But if you do the chicken fried steak right, it won’t require the knife.

It's summer and strawberries are everywhere. I've had a punnet sitting in my refrigerator for a few days and I didn't know what to do with them. Instead of using them in some guilty pleasure dessert (like, say, a strawberry cheesecake), I decided to incorporate them into my new breakfast favorite: pancakes.

I have been on a shrimp and noodle kick the last few days. It falls under the 30 minute meal mark for me because noodles and shrimp cook pretty fast. I decided to revisit one of my favorite noodle dishes from the past, Singapore Noodles.

Corn bread is a weakness for me, but I don’t eat it enough for sure. My hubby is weird, and doesn’t like corn bread-corn flour-corn cake…….you get the picture. When I made this recipe, I wanted to add in anything you can find at a farmers market.

Tomatoes.I seriously love my tomatoes. I wait in anticipation for tomato season like no other produce season. I savor the first bite of the vine ripened tomato, I can in order to save that flavor throughout the winter, and when I occasionally need a tomato fix (to make guacamole) during the winter, I make sure I’m purchasing slave free-tomatoes (usually from Trader Joe’s or Whole Foods.)
