You may be familiar with the version using cream of mushroom, celery or chicken soup. Not my style–although I’m not averse to keeping a few cans of soup in the pantry for emergencies. I wanted a recipe that was fresh all the way.

In the summer, all the area around Naples (I grew up in Sorrento) makes fritto misto, a mixed fried antipasto that can include a variety of seafood, vegetables and herbs, deep fried in a yest batter, which goes under the name of pasta cresciuta (pastetta or pastella).

It’s no secret that I am a fan of pancakes (even more, the different syrups that go on top of pancakes!). When Rachel from the blog Rachel Cooks announced that she was devoting the entire month of July to pancakes and asked me to participate, I knew this was one event I didn’t want to miss.

Honeycomb ice cream is the very favourite flavour of a friend of ours, so this honeycomb ice cream slice, or semi-freddo, seemed a suitable house warming gift for his move into a house which already has all the kitchen gadgets, towels and cushions it could ever want.

I don’t know about you but I’m always looking for quick, easy, and Delicious when it comes to dinner. I’m not a meal planner. I’m more like a ‘feel planner’ and mostly I ‘feel’ like a stress-free glass of wine and a hot meal that doesn’t take longer then 20 minutes.

I’m a huge fan of veggies, and always looking for new ways to prepare them. Just recently, I made a ginormous salad to bring to a party and had a ton of leftover vegetables. My first thought was to simply make a salad, but then I decided that cooking them in some fashion was more appealing.

I don’t know about you, but when it gets this hot the last thing I want to eat is a warm and heavy meal. On days like this in Ottawa, mum and I would often drive to the cottage, stopping at the Carp farmer’s market on the way.

Eggplant appears in some form or fashion on almost every antipasti table throughout Italy.The combination of flavors in this particular variation is incredible and makes a fabulous addition to an antipasti table or can be served as a delicate Summer salad.

I introduce to you, the Costello’s Spicy Herby Potatoes. I’ve taken them on every picnic imaginable since I discovered how fab they are – Freezing cold New Year’s Day walks, meals on the beach in Biarritz in sublime temperatures, the grotty picnic room of local outdoor play areas – you name it, they’ve been devoured there!

With this recipe, I am especially smitten because instead of having some carb-y macaroni, you have a nutty, protein-packed substitute. It makes you feel not so bad about all the cheese you are about to ingest (although it's really not too much per serving).

I would give anything to have a backyard with a cool, refreshing pool these days, but since I don't think my apartment building plans to turn the parking lot into an outdoor pool any time soon, I've been settling for the next best thing for cooling off - popsicles!

Lunch is so often forgotten, but such an open ended meal. I like lunch because it’s sort of an anything goes arena of the food world. Oftentimes I’ll simply make a second breakfast, something like an omelet with some berries.
