Taiwanese Cabbage is a very sweet variety of cabbage that is favored for many dishes originating in Taiwan. There are many different varieties of this vegetable.

Physical Description

Taiwanese Cabbage is not rounded like traditional green cabbage, but has a flat top. It also weighs less than green cabbage.

Selecting and Buying

Choosing: Look for Cabbage with a vivid green color and no signs of limpness or wilting. The vegetable should feel firm and fresh and have very few loose leaves.
Procuring: Taiwanese Cabbage is usually grown in Taiwan and Southeast Asia.

Preparation and Use

Recipes which use Taiwanese Cabbage include: Taiwanese Cabbage and Sausage, Sautéed Cabbage and Taiwanese Salad. The cabbage can also be fried, or stir fried.

Cleaning: Rinse the outside of the cabbage along with the inner leaves under cold running water.

Conserving and Storing

Taiwanese Cabbage should be stored in the refrigerator while wrapped in plastic or kept in a Tupperware container. In order to keep the cabbage from bruising, handle with care. Keeping it wrapped and chilled will help the cabbage to retain the vitamins they hold.
