Peanut Soup A La Paraguaya
Ingredients
1 cup
fresh
peanut
1
onion
2
tomatoes
1
smallish
green pepper
3
carrots,
or more if you want an orangey colour
1 clove
garlic
2 o 3
lemon
leaves and/or a stalk of
lemon
grass
3 pieces
of bone with
marrow,
or
ribs
Preparation

Soak
peanuts overnight, then
peel.

Process with milk until smooth. Process carrots likewise.

Fry
vegetables until
tender,
add
bones
and
fry
a little longer.

Then add processed peanut, carrots, lemon leaves or lemon grass, and
simmer
until well cooked, about 1h 30 m. S

hould be smooth but not too thick.

Add water or milk if necessary.
Stir
often.

Serve
with
fried
mandioca (yucca).
