Nana Burns' Tomato Relish

Ingredients

3 pounds firm tomatoes
1 pound apples
1 tablespoon salt
1 pound onions
1 tablespoon small curry powder
1 pound sugar
1 1/2 tablespoons level mustard
a pinch of cayenne
Vinegar to cover (about 1.5 pints)

Preparation

Cut up tomatoes into medium pieces, place in a dish and sprinkle with salt. Cut up onions in a separate dish and also sprinkle with salt.

Stand overnight then drain off liquid. Put into a pan, add vinegar, boil for 5 m inutes.

Add dry ingredients and apples, boil well for about 1 hour.

Place into prepared jars.
