Pineapple Granita

Ingredients

2 lrg Ripe pineapples, peeled, cored and cut into lg. chunks or
2 cups pineapple juice
1/4 cup Water
1/2 cup Sugar

Preparation

1. Pass the chunks of pineapple through a juicer to make fresh pineapple juice or substitute store-bought pineapple juice.

2. Bring the water and sugar to a boil in a small saucepan, stirring a few times to help dissolve the sugar. Remove from the heat and let cool.

3. Whisk the pineapple juice into the sugar syrup and transfer to a shallow 2-quart freezer-proof container.

4. Place the mixture in the freezer, mixing with a fork every 30 minutes until frozen, about 2-3 hours.
