Harvest Dinner: Brined Pork Chops With Apples

A gorgeous meal, these pork chops taste dreamy with a side of seasonal apples. With the cooler weather, we can finally pull out our heartier recipes and enjoy the harvest season. Gardens are brimming with produce and the farm seems to be ready to pick and preserve all at the same time. A family favorite are the apple trees. The kids have nibbled the apples as they ripened for over a month, until one day someone came running into the kitchen to say that they tasted "perfect." Now, after making dozens of jars of applesauce, we are eating apples in every dish I can put them in. They make a wonderful foil for juicy pork chops. 

Remember to not overcook these succulent chops. The apple cider based brine makes them full of flavor. Your family will love this dish!
