Goreyhaus' Filipino Chicken Adobo

Ingredients

10 inches chicken thighs, bones and skin on
4 large garlic cloves, crushed or chopped
2/3 cup water
2 bay leaves
1 tablespoon white vinegar

Preparation

Wash the chicken thighs in cool water and pat dry with paper towels.

Place all the chicken in the bottom of a deep pot or Dutch oven.

Add all the remaining ingredients and stir to combine.

Place pot over medium heat, partially covered, and bring to a low boil.

Cook for about 45 minutes, or until chicken is thoroughly cooked; stirring often to be sure chicken cooks evenly, and is well-coated with sauce.

When chicken is cooked, remove lid and allow sauce to reduce & thicken slightly; about 5 to 10 minutes.

Remove bay leaves and serve.

Both Chicken and Pork Adobo are very popular dishes here in Hawaii. It's one of those recipes that have crossed the to every race in the islands. Dam it's 2 am and I am hungry for Chicken Adobo!!! It's not unheard of me cooking in the kitchen this time in the morning, ha ha.

Serve this authentic Filipino family recipe with steamed rice and vegetables. Excellent with steamed fresh green beans, chopped ripe tomatoes, and a cucumber salad (with a simple oil & vinegar dressing).
