Penne Pasta With Fresh Asparagus, Mozzarella, Spring Onions and Basil

Ingredients

200 grams penne pasta
6 spring onions, chopped
2 large balls of mozzarella sliced
Fresh basil
Olive oil
Salt and pepper

Preparation

Bring a large pan of salted water to the boil and cook the pasta as per the instruction on the packet

Meanwhile bring another pan of water to the boil, when the water is boiling blanch the asparagus briefly, remove with tongs and leave to one side

Lightly oil a grill pan and cook the onions until tender, then add the asparagus, cook for about 8 minutes.

To serve, divide the pasta between the plates, then top with the onions, asparagus, mozzarella, fresh basil and pour over the oil and balsamic vinegar
