Ingredients

3 tablespoons olive oil
2/3 cup diced bacon
1 large onion, finely chopped
1 pound 2 ounces Savoy cabbage, shredded
8 3/4 cups boiling water
4 tablespoons rice
1/2 teaspoon meat extract or Maggi Seasoning
Salt

Preparation

Heat the oil in a large pan. Add the bacon and onion and cook over low heat, stirring occasionally, for 8-10 minutes, until the onion is beginning to brown.

Add the cabbage, cover and cook, stirring occasionally, for about 15 minutes.

Pour in the boiling water and simmer for 10 minutes, then add the rice, and cook for 30 minutes more. Stir in the meat extract of Maggi Seasoning and serve in a soup tureen.
