Clean Out The Fridge Chicken Casserole

Ingredients

1/4 cup white wine
3 cups grated sharp cheddar cheese, divided
1 package (2 ΒΌ oz.) sliced almonds, toasted
Salt and pepper to taste

Preparation

Preheat oven to 350 degrees F.

In a large bowl, toss together the noodles, soup, broth and wine. Add the chicken, 2 cups of the cheese, almonds, roasted red pepper, mushrooms, salt and pepper, to taste, and toss gently to combine.

Transfer the mixture to a greased 13 x 9 x 2 inch casserole and top with the remaining cup of cheese.

Bake for 30 minutes, or until bubbly.
