Clam Spaghetti

Ingredients

1/2 cup Olive Oil
1 dried red Chili Pepper, finely chopped
3 lg. Garlic Cloves, minced
1 lg. Onion, chopped
1/2 cup fresh Basil Leaves
1 tablespoon Oregano
Salt and Pepper to taste
2 Cans (4 1/2 oz.) chopped Clams, drained with liquid reserved
1 pound dried Spaghetti or fresh equivialent
Pimentos, optional

Preparation

Heat Oil in Skillet or Wok, add Onions, Chili Peppers, Garlic. Cook until Onions are soft and translucent.

Add Basil, Oregano, Salt and Pepper, Clam liquid and reduce.

Cook Pasta to taste.

Simultaniously add Clams, Parsley and 3 Tbsp. of grated Cheese to Sauce and simmer about 5 min.

Drain (do not shock) Pasta and toss with Sauce.

Serve hot directly from Skillet with crusty Bread.
