Daiyadillas

Ingredients

2 fresh corn tortillas, locally made if possible
handful Daiya mozzarella-style shreds (dairy-free cheese alternative)

Preparation

Heat a skillet to medium low

Lay one corn tortilla in pan

Top with Daiya

Lay other ingredients on top of cheese substitute if desired

Lay other corn tortilla on top

Put lid on pan and heat slowly until Daiya melts

Flip over with a spatula and heat through

Cut into quarters and serve with hot rice, avocado, mangoes, etc.

About

This easy-to-prepare meal is a substitute for quesadillas made with wheat flour tortillas and regular cheese. The reason we call them "daiyadillas" is because we want to distinguish between foods that are off-limits for my daughter because of her food allergies, and those that are safe for her. The Daiya melts nicely!
