Runzas

Ingredients

2 cups water
2 pkts yeast
cup sugar
teaspoon salt
cup oil
1 egg
cup flour
pound hamburger
3 cups cabbage, shredded
cup onion, chopped
salt and pepper, to taste
Tabasco sauce, to taste

Preparation

[Note: You can prepare a batch of these and freeze them for quick meals.] [You can also use Pillsbury Hot Roll Mix. Prepare it according to package instructions and let rise under a bowl for about 40 minutes while you prepare the other ingredients.]

Coleslaw mix (pre-shredded cabbage and carrots) from the produce department speeds up preparation.]

Stir first 4 ingredients together until dissolved. Add egg and oil. Mix well.

Add flour. Knead well. Roll to 1/2 inch thickness and cut into 6" x 4" rectangles. No need to let rise.

Filling:Brown crumbled hamburger draining off any excess grease. Add remaining filling ingredients and cover until slightly cooked. Wrap dough around filling, usingwater to seal edges. Place on cookie sheet and bake at 325 degrees for 20 minutes or until lightly browned.

About

"Runza Hut" is the name of a fast-food chain in Nebraska and a few other Midwestern states. The "runzas" they sell come in Italian (sausage and mozzarella cheese) as well as "regular" (seasoned browned ground beef and cabbage, with or without cheese).

The runza is a variation on Eastern European meat-filled pastries known as pirogi, piroshki, etc. there are many varieties and ways to make them, but ground beef or lamb and cabbage are common ingredients.
