Quatre Epices (four spices) is usually a combination of pepper, cloves, nutmeg and ginger, used in French or Middle Eastern cooking to flavor sausages, soups, stews and vegetables; sometimes allspice or cinnamon may be substituted for one of the other spices.

Ingredients

1 1/4 ounces black peppercorns
1/2 ounce ground nutmeg
1 tablespoon ground cinnamon
2 teaspoons cloves

Preparation

Combine all spices in a clean spice grinder and grind to a medium-fine powder

Place in a tightly sealed container and use within one month.
