Great Great Grandma Maude's Burnt Sugar Cake

Ingredients

1 1/2 cups sugar
1 cube butter
3 tablespoons caramel
2 teaspoons baking powder
2 1/2 cups flour
1 cup water

Preparation

Cream sugar and butter until fluffy. Add egg yolks and beat well. Add flour and baking powder alternately with water. Fold in egg whites which have been stiffly. Add caramel last. Put into 2 pans making twp layers, and bake in the oven at 350 F for 25 to 30 miutes. Ice with powdered icing and add a little of the caramel to the icing for color and taste.

The caramel can be made by putting 1/2 cup sugar in a pan or heavy iron skillet and burn it black, stirring the whole time. Add 1 cup of boiling water, and boil until it thickens and sugar is completely dissolved.

This recipe is very old fashioned kind of cake when you consider that Grandma Maude was born in 1862. This recipe is a part of the Bell-Conlee Family Cookbook. It's a very simple, tasty kid of cake. I had my Aunt Catherine make me this cake one time and I really liked it.
