Grilled Wings with Berry Balsamic BBQ Sauce

Ingredients

2 cups mixed berries, rough chop {I used strawberries, blackberries & raspberries}
1/4 balsamic vinegar
3/4 cup light brown sugar
1 cup ketchup
1/2 cup water
1 Tbsp garlic powder
salt & pepper to taste
3 lbs wingettes & drumettes

Preparation

Mix the fruit, balsamic vinegar, brown sugar, ketchup, water, garlic powder, salt and pepper in a saucepan over medium low heat. Simmer for 20 minutes, stirring occasionally. Using an immersion or hand blender smooth out the bbq sauce. Season again with salt and pepper to taste.

For the wings. I always toss my wings in salt and pepper to make sure that the chicken itself is seasoned. Place onto a hot grill and cook for about 15-18 mins or until cooked through {the cooking time may vary depending on your grill}.

After the wings are cooked go ahead and toss in a large bowl with just enough of the sauce to coat the wings.

I love making my own BBQ sauces, you can make so many different varieties by just changing up a few ingredients. Heres where this sauce gets interesting, it starts with 2 cups of ripe berries {a mix of raspberries, strawberries and blackberries} and some balsamic vinegar. The fruit is obviously the sweet element and the vinegar the acidity. To balance it all out and what turns it into bbq sauce is some brown sugar, ketchup, garlic powder, salt, pepper and a little water. All mixed together in a pot and simmered until slightly reduced. The wings are grilled to charred perfection then tossed in this fantastic bbq sauce!
