[edit] Ingredients

¼

cup soy sauce

1

teaspoon grated lime zest

juice of 2 limes

1

tablespoon hot sauce

2

tablespoons honey

2

garlic cloves, minced

¼

cup chopped cilantro or mint

1

pound ½ inch thick boneless pork loin chops, cut crosswise into ½-inch-wide strips

olive oil

1

large onion, chopped

1

bell pepper (any color), thinly sliced

¼

cup light rum

sprigs of cilantro or mint

lime wedges

rice

[edit] Preparation

Step 1

In a medium mixing bowl combine the soy sauce, zest, lime juice, hot sauce, honey, garlic, and cilantro. Mix well and add the pork strips

Step 2

Marinate the pork for at least 20 minutes, or overnight if you have the time

Step 3

Heat the olive oil in a large skillet and saute the onion and pepper over medium-high heat until lightly browned, about 3 to 5 minutes. Add the pork strips, reserving the marinade for use later.

Step 4

Strip fry until pork is cooked through, approximately 3 to 4 minutes

Step 5

Remove the cooked pork, onion, and pepper to a plate or bowl

Step 6

Add the reserved marinade to the skillet. Turn the heat up to high, and when the mixture starts to bubble, add in the rum. The sauce will begin to thicken. When it reduces to the consistency of a glaze, return the pork, onion, and pepper to the pan to coat. Stir for a few seconds in order to combine all of the ingredients

Step 7

Serve over rice, garnished with sprigs of fresh cilantro and a lime wedge
