Andouille and Swiss Chard Frittata
2 tablespoons olive oil
1 link andouille sausage, diced
1 link andouille sausage, sliced into discs
1/4 teaspoon red pepper flakes
2 medium-sized potatoes, peeled, cooked and cut into chunks
8 eggs, beaten
salt and pepper to taste
1/2 cup Parmesan cheese
Drizzle olive oil into a large skillet at medium heat.
Add the andouille sausage and cook until lightly browned.
Reduce heat to medium-low and add the Swiss chard.
Once the Swiss chard has wilted, add the potatoes, shallot, red pepper flakes, thyme, salt and pepper.
Saute until all ingredients are well-distributed.
Pour in the eggs and very gently stir until they begin to firm.
Sprinkle Parmesan cheese over the top.
Place under a preheated broiler until the eggs are fully set and the top is golden.
Remove from heat and allow to cool for 5 minutes before serving.
